Ok you’ve caught me – I am jumping on the green juice bandwagon. I don’t know what it is about these little beauties but whenever I have one – within seconds of the first sip – I feel super energised, full of beans and ready to take on the world.
And feeling on the top of my game has never been more important for me as on Sunday I’m cycling from London to Brighton (60 miles!) for charity. Eeeeeeeeeeeeeeeeek!! So, this week I’ll be making sure to get my fill of green goodness and I thought I’d share one of my favourite green juice recipes with you.
The great thing about these health-boosting juices is that anything goes. Hate ginger? Then give it a miss! Fancy a bit more of a smoothie consistency? Chuck in some avocado or a banana. You can play around until you’ve found your perfect combo of fruits and veg.
Makes 1 large glass.
INGREDIENTS:
1 apple; cored // 1/4 cucumber ( around 90g) // 1 stick of celery // large handful of spinach // 125ml coconut water (I’ve been really into a brand called Fountain of Youth lately – the coconut water comes in a really cool can which is a little different to the cartons I’m used to buying) // juice of 1 lime // 2g of fresh minced ginger
METHOD:
Start by roughly cutting up all the veg into large chunks. Then simply whizz up all the ingredients in your blender and enjoy enjoy enjoy.
S-O-T-H TIP:
Since this makes one large glass of quite filling juice I sometimes save half for later and stick it in the fridge. I find it’s even more refreshing after it’s been chilled for a while.

Hi Tamara, I’m also into green juices. As a matter of fact, we created our Kale and spinach recipe. I never tried the coconut water to include to my smoothies. I will try to use that one. Thanks for sharing 🙂
